Disclaimer: I am not a medical professional – far from it. The knowledge I have gained has come from conversations with my doctor, internet research, and personal experience. If you suspect you may have an issue with digesting gluten, or if you have concerns with your diet, please, please, please go find a good doctor! It is very important that you don’t change your diet without speaking to your physician first. The test for Celiac disease is only accurate if you currently have gluten in your system.

Celiac Warning: Friends with Celiac, I marvel at the discipline with which you must live your life! I am of the strange breed that has a Non-Celiac Gluten Sensitivity. Therefore, my body does not properly process gluten, but I do not have the dangerous gastro-intestinal consequences. I also have a higher threshold for the amount of gluten that throws my system out of whack. You will often find recipes and recommendations on this blog that contain small amount of gluten or do not address contamination concerns. I will do my best to point these out when they arise, but please look critically before you dive in. I would love to have each of you sound off in the comments with your suggestions on how to make my food posts Celiac friendly.
